Bean Salad
Ingredients
200 g small tomatoes (5 small tomatoes)
1 stem basil
1 small clove of garlic
3 tbsp Olive oil (preferably lemon olive oil)
salt
pepper
Cane sugar
1 small vegetable onion
2 tbsp Red wine vinegar
425 g white beans (drained weight, can)
50 g Rocket (0.5 bunch)
2 slices Parma ham
4th Grissini (preferably whole grain)
Preparation
1. Wash the tomatoes, cut out the stalks in a wedge shape. Halve the tomatoes crosswise and remove the seeds with a spoon.
2. Wash the basil, shake dry, pluck the leaves and chop. Peel the garlic clove and cut it into slices.
3. Mix the basil and garlic with a few dashes of olive oil, salt, pepper and a pinch of sugar and pour onto the tomatoes.
4. Dry tomatoes with the cut surfaces facing up on an oven rack at 110 ° C for 2 hours (fan-assisted 90 minutes at 100 ° C, gas: not recommended). Take out and let cool.
5. Peel the onion and cut into 5 mm thick slices. Heat a grill pan and brush with a little oil.
6. Grill the onion slices for 4-5 minutes on each side on not too high heat until golden brown.
7. Put onion slices in a bowl and mix with vinegar.
8. Rinse the beans with cold water and drain well.
9. Add to the onion slices with the dried tomatoes and add the remaining olive oil. Mix everything thoroughly and season with salt and pepper.
10. Clean, wash, spin dry the rocket salad and place in salad bowls. Put the bean salad on top of the salad.
11. Halve the ham slices, wrap around the grissini and serve with the salad.
