Hello to everyone. I hope you feel fit and healthy to start an active week. Today on Active Monday I have a tasty and healthy vegetarian filled zuchini recipe. I love love love zuchini, and you? And a short but effective abs workout to loose fat from belly. Enjoy them:)
Vegetarian Filled Zuchini
Ingredients
Cocktail tomatoes
1 medium zucchini
some cocktail tomatoes
1 spring onion
Fresh basil
Sweet paprika powder
salt
pepper
2 tbsp heavy cream
Fresh parsley
Chives fresh
2 tbsp parmesan, freshly grated

1 can of sweet corn

Preparation
Divide the zucchini into pieces about 4 cm wide, cut the ends straight away.
Now cut out the zucchini pieces with the apple casing cutter, put the zucchini meat aside.
Place the zucchini tubes in a baking dish, put a cocktail tomato in each tube.
For the filling, sauté the chopped spring onion in a pan with a little oil, season with a little paprika, salt and pepper.
Cut the zucchini meat into small pieces and sauté briefly in the pan, fold in the chopped basil.
For the filled zucchini, carefully pour the filling into the zucchini tubes with a teaspoon.
Now mix the cream with the parsley, chives and parmesan in a small bowl.
Spread the mixture over the filled zucchini and bake in the oven for about 30 minutes.
Serve with rice or potatoes and salad as desired.
