Hello from Active Monday week 36. We have the best days of autumn (at least in Austria). Unfortunately, the corona epidemic continues. Apart from wearing a mask and keeping the distance, the most important measure we can take is to keep our immune system strong. We can do this both with a healthy diet and exercise. I think eating seasonal vegetables and fruits on time is the healthiest. That's why I'm adding an autumn salad recipe for you. There is a lower body schulpting workout as an exercise video. Enjoy it :)
Autumn salad with pears, walnuts & bacon
ingredients
4 slices of bacon
4 tbsp walnut kernels
150 g rocket
1 red onion
3 tbsp balsamic vinegar
salt
pepper
1 teaspoon honey
4 tbsp good olive oil
2 ripe pears
100 g blue cheese
preparation
- Fry the bacon in a pan until crispy. Remove and drain on kitchen paper. Roughly chop the nuts and toast them in the bacon fat. Take out, let cool down.
- Sort out the rocket, wash and drain. Peel the onion and slice or cut into fine rings. For the vinaigrette, mix together vinegar, salt, pepper and honey. Beat the oil on it. Wash, quarter, core and cut the pears into thin wedges.
- Mix the rocket, onion, pears, nuts and vinaigrette together. Serving. Crumble the bacon and cheese over it. In addition: baguette.
