Active Monday-28 Minute Stability Ball Workout & Couscous Salad



Happy Active Monday to everyone! I hope you are ok. Last week was a very very busy week for me. The first school month is always a little bit busier than other months. School shopping, parents' information evenings, autumn festivals, etc. After these stressful days, long nature walks or yoga are very helpful to me. A healthy lifestyle also helps us stay healthy in general.
For today's workout, I would like to share a stability ball workout and a very tasty couscous salad. Enjoy them and have a happy and healthy week. 

Couscous Salad

ingredients


2 servings


125 g instant couscous

0.5 cucumber

125 g cherry tomatoes

0.5 bunch of flat-leaf parsley

0.5 bunch mint

1 lime

0.5 tsp liquid honey

2.5 tbsp Ajvar spicy (You can also use tomato paste, samba olek , or pesto if you don't like Ajvar)

preparation

125 g instant couscous 0.5 g cucumber 125 g cherry tomatoes
Prepare couscous according to package directions. Wash the cucumber, quarter lengthways, and deseed. Cut into rough cubes. Wash and halve the cherry tomatoes.

0.5 bunch flat-leaf parsley 0.5 bunch mint 1 lime 0.5 tsp runny honey
Wash herbs, shake dry, and chop leaves. Squeeze the lime juice and mix it with honey.

2.5 tbsp Ajvar spicy salt pepper
Stir the ajvar into the couscous and season with salt and pepper to taste. Add cucumbers and tomatoes and mix. Fold the herbs and lime-honey juice into the mixture.
