Active Monday-10 Minute Abs Workout & Quinoa Bowl Recipe



Hello to everyone.  How quickly a week has passed, hasn't it? Last week, we had very busy days when my two children started school. So we were very, very tired on Friday evening. But don't give up, a new and busy week awaits us. I'm sure there are many mothers in my situation. We need to take good care of ourselves in order to withstand this pace. How about starting the week with a 10-minute abs workout? I also have a healthy quinoa bowl recipe. Enjoy this Active Monday post:

Quickie Quinoa Bowl

ingredients

200g quinoa

   salt, pepper, cinnamon, sugar

400g sweet potato

5-6 tbsp olive oil

1/2 bunch of radishes

50 g arugula

1 can (425 ml) of kidney beans

1 large avocado

2 small red chili peppers

3 tbsp apple cider vinegar

50 g roasted and salted pistachios

75 g dried cranberries

Cook quinoa in boiling salted water according to package directions. Allow cooling slightly.

Meanwhile, peel and wash the sweet potatoes and cut them into cubes of approx. 2 cm. Heat 2 tbsp oil in a pan. Fry the sweet potato cubes in it for 4-5 minutes. Clean the radishes, wash, halve and cut into wedges. Wash rocket, chop finely. Pour the beans into a colander, rinse and drain. Halve and deseed the avocado. Dice the flesh. Mix everything together.

 Clean the chili, cut lengthwise, wash, deseed and finely chop. Mix in the vinegar and 1 teaspoon of cinnamon, fold in the rest of the oil, and season with salt, pepper, and sugar. Remove the pistachios from the shell and roughly chop. Mix the cranberries and quinoa into the blended ingredients. Drizzle over the vinaigrette and mix again. Serve the salad in bowls and sprinkle it with chopped pistachios.
