Hello everyone, happy Active Monday!!! I am fit and ready for a new busy week. I hope you are ready too. I take long fall walks and this motivates me a lot.
Today I have a short 20-minute fat-burning workout. And as a healthy recipe, kimchi fried rice recipe. Enjoy them and have a wonderful week!
Kimchi fried rice
ingredients
300 g rice (from the day before)
Salt
1 bunch of spring onions
300g kimchi (homemade or store-bought)
2-3 tbsp oil
4 tbsp gochujang (Korean spice paste)
150 g frozen edamame (peeled, or frozen broad beans)
1 handful of sprouts (e.g. bean or pea sprouts)
Sesame nori chips for serving
preparation
👉 Cook the rice in salted water according to package directions. Clean and wash the spring onions and cut them into fine rings. Divide white and green rings, setting aside a handful of green rings. Roughly chop the kimchi.
👉 Heat oil in a pan. Sauté the white scallion rings in it. Add the seasoning paste and sweat for about 1 minute. Add the drained rice and stir-fry for about 5 minutes. Stir in the kimchi, edamame, and green spring onion rings and sauté for 2-3 minutes.
👉 Season the fried rice to taste. Sprinkle with the reserved spring onion rings and bean sprouts and serve with nori chips, if you like.
