Active Monday - Weekly Workout & Spinach-Mushroom Salad

 Hey, another Active Monday arrived! I am very excited today. Because during you read this article, I will be at school with my kids. We have school start in Austria! The summer was toooooooo short 😭😭😭I wish we had one more month summer holidays :) Anyway, show must go on.



Today I brought you a healthy and delicious and quick recipe with mushroom and spinach and another great workout video by MadFit.

Spinach & Mushroom Salad 


For the salad

spinach the leaves roughly chopped
2 tbsp virgin olive oil
50gr diced bacon
250 gr mushrooms sliced in slices
sea salt and pepper


4 tbsp virgin olive oil
3 tbsp balsamic vinegar
1 scarlet finely chopped
3 tbsp dry red wine (if desired)


     Place the spinach in a large serving bowl.

     In a large pan, heat 1 tablespoon of olive oil over medium heat. Add the bacon and stir-fry until crispy (6-7 minutes). Add the mushrooms, season with salt and pepper and cook while stirring until the mushrooms are tender (5-7 minutes). Take the pan off the stove.

     In the meantime, bring the ingredients (olive oil, vinegar, red wine, shallots) to a simmer in a medium-sized saucepan. Season with salt and pepper.

     Immediately pour the warm vinaigrette over the spinach mix and mix. Add the bacon and mushroom mix and mix again.
