Pumpkin Ratatouille
Ingredients
500 g small pumpkin (1 small pumpkin)
2 red peppers
2 green peppers
4 tomatoes
2 zucchini
1 onion
1 chili pepper
3 cloves of garlic
2 tbsp olive oil
400 ml vegetable stock
2 sprigs of thyme
2 stalks of basil
Iodized salt with fluoride
pepper
4 slices of wholemeal bread or 4 wholemeal rolls
Preparation steps
Peel and halve the pumpkin, remove the seeds and cut the pulp into 1.5 cm cubes. Wash the peppers, cut in half, remove the seeds and white inner skins, also cut the peppers into 1.5 cm cubes.
Wash the tomatoes, scald them with hot water and peel them, cut the pulp into cubes. Wash the zucchini and cut it into thin slices. Peel the onion and cut it into strips. Wash the chili pepper, remove the seeds and white inner skins and cut into rings. Peel garlic and chop finely.
Heat the oil in a saucepan and sauté the garlic, chili rings, and onion strips for 1–2 minutes. Then add the remaining vegetables. Deglaze with broth and simmer for 10-15 minutes over medium heat.
In the meantime, wash the thyme and basil, shake dry, pluck the leaves, and chop.
After the cooking time, add the thyme and basil to the vegetables and season with salt and pepper. Serve bread with it.
