Mushroom salad with garlic, zucchini and feta
ingredients
600 gr mixed fresh mushrooms chanterelles, champignons, porcini mushrooms
2 zucchini
3 red garlic cloves
1 Shallot
3 spring onions
1 bunch chives
2 tbsp olive oil
2 tbsp white balsamic vinegar
salt
pepper from the grinder
200 gr diced feta
Preparation steps
- Clean the mushrooms and cut into slices or pieces. Wash the zucchini, clean, cut in half and also cut into slices. Peel and finely dice the garlic and onion. Wash the spring onions and chives, shake dry and cut into rings or rolls.
- Heat the oil in a pan and sauté the mushrooms for 3–4 minutes while swirling. Add the zucchini, onion, garlic and spring onions and fry briefly. Remove from heat and let cool down briefly. Mix the vinegar with the chives, season with salt and pepper and mix with the lettuce along with the diced feta. Serve lukewarm.
