The benefits of chickpeas are well known in recent years. Chickpea flour is widely used by both vegans and those who want to eat healthy instead of white flour. I thought that the omelette with chickpea flour and vegetables was a healthy source of energy for the summer heat.

Chickpeas omelette with vegetables
Ingredients
1 bunch of radishes
100 g fennel
4 snack cucumbers
5 tbsp apple cider vinegar
1 tbsp honey
4 tsp sambal oelek
½ tsp salt
2 tbsp canola oil
dough
80 g chickpea flour
4 eggs
2 dl mineral water
2 tbsp canola oil
Preparing
Slice radishes and fennel into slices. Cut the cucumber into small pieces. Mix vinegar, honey, about half of the Sambal Oelek and salt well. Mix with the vegetables and let steep for at least 1 hour.
Mix all the ingredients for the dough into a smooth dough. Season with salt. Let the dough rest for about 10 minutes.
Heat the oil in a coated frying pan. Pour in the dough. Cover and let stand for about 10 minutes over medium heat. Put the chickpea omelette on a plate. Serve with sweet and sour vegetables and remaining Sambal Oelek.
