LOW CARB BANANA CARROT BREAD WITH WHITE CHOCOLATE
The low carb banana bread hype is endless and I understand exactly why. It's just so incredibly tasty and one of the simplest recipes out there. So that it doesn't get boring, I continuously create new versions of the classic banana bread. Today I would like to introduce you to my absolute favourite so far: The low carb banana carrot bread with white chocolate. Low carb banana carrot bread with white chocolate
Low carb banana carrot bread
This banana bread variant is refined with carrots and white chocolate. The important point is that the bread is low carb (i.e. sugar-free and gluten-free), super easy and quick to prepare. I hope you like it as much as I do.
White chocolate without sugar
It is very important with this recipe that you do not use "normal" white chocolate. This has nothing to do with chocolate anymore because it consists mostly of sugar. If you want to bake this low carb banana carrot bread afterwards, you should get white chocolate without sugar that has been sweetened with a natural sugar substitute such as erythritol, stevia and/or birch sugar.
Ingredients for carrot banana bread
2 ripe bananas
150g carrots, grated
150g butter
3 eggs (M)
50g erythritol
1 tsp liquid stevia
60g grated hazelnuts
60g hazelnuts, roughly chopped
70g whole grain oatmeal, gluten-free
30g flax flour
1 tsp cinnamon
½ tsp allspice, ground
½ tsp cloves, ground
1 teaspoon Baking powder
2 tsp psyllium husk, ground
100g white chocolate drops, sugar-free
For topping:
1 banana
1 tbsp coconut blossom sugar
PREPARATION
Preheat the oven to 200 ° C bottom and top heat and melt the butter in it. Wash the carrots and finely grate them together (or chop them in a food processor).
Peel the bananas roughly chopped into a bowl. Use a hand blender to make a porridge. Add the eggs, erythritol and stevia and continue pureeing. Then gradually add the liquid butter as you continue to puree. Then you can remove the blender and continue working with a spoon or spatula.
Put the carrots, ground and chopped hazelnuts (you can also use other nuts or almonds), whole grain oatmeal, golden flour, baking powder and all the spices of your choice in the bowl and mix well.
Fold in the ground psyllium husk vigorously for the necessary binding. Finally, fold in the white chocolate drops. It is very important that you use white chocolate without sugar.
Grease a box mould and sprinkle it with grated nuts. Fill in the dough and halve another banana lengthways. Place the cut surface on the dough and press it down lightly. Sprinkle the surface with a little coconut blossom sugar.
Bake the low carb banana carrot bread at 200 ° C for 45 minutes. Then reduce the heat to 180 ° C and bake for another 30 minutes. If the surface gets too dark, you can cover it with baking paper.
Be sure to let the low carb banana carrot bread cool completely before you throw it out of the crate. It is best to store it in an organic beeswax cloth (no need in the refrigerator). You can of course also freeze some of them (please not in the beeswax cloth)
