Active Monday 2 - Full Power Yoga - Bean Mozarella Salad


Hi, my dears. At the 2nd Active Monday week I have a very tasty and healthy bean mozzarella salad recipe for you and a long yoga exercise video. Enjoy it.

Bean Mozzarella Salad

ingredients

100 gr green beans
salt
10 gr Ginger
2 stems
flat-leaf parsley
4 stems coriander
½ lime
50 ml Mediterranean vegetable broth
pepper
50 gr Mozzarella (9% fat)

Preparation 


Wash the beans, drain, clean and cook in boiling salted water for about 10 minutes.
In the meantime, peel and finely grate the ginger. Wash the parsley and coriander, shake dry and pluck the leaves.
Squeeze the lime and put the juice with the ginger, parsley and coriander leaves in a tall container.
Puree everything with a hand blender and pour in the broth. Season the pesto with salt and pepper.
Drain the mozzarella and dice.
Drain the beans, drain and arrange on plates with the mozzarella. Spread the pesto on top and serve.
