Materials

A medium-sized pumpkin or hokaido squash

Cream

A clove of garlic

First of all, I wash the zucchini thoroughly. I cut the pumpkin in half and remove the seeds with a spoon.


Then I cut it into smaller pieces and wash it. I put a coffee cup of water at the bottom of the pot and cook the squash over very low heat until it becomes soft. Then I puree it in the food processor and mix it with cream. I put my ingredients back into the pot, add milk little by little and mix. The correct consistency will be more watery than puree but thicker than soup. I add a clove of garlic and black pepper. I add the salt when it's almost cooked. After adding the desired amount of butter, our soup is ready to be served. You can also add broth if you wish.

Before serving, I drizzle pumpkin seed oil on top.
