Active Monday-2 Weeks Shred Workout & Goat Cheese Salad




Haaaaappyyyyy Active Monday to everyone! I hope you are feeling good today. I am very active lately. We are taking regular long walks with my daughter and go swimming 3-4 times a week. I can see the difference in my body and soul.
Today, I have a 2 weeks shred workout example from Chloe Ting and a very tasty goat cheese salad with seeds. I find salad is very suitable for hot summer days. Have a happy and healthy week.

Salad with goat cheese and seeds

ingredients



1 piece of kohlrabi

1 piece of carrot

1 piece of carrot, purple

400 g potatoes (triplets)

1 piece of spring onion

8 grams of honey

40 g sunflower seeds

75 g salad mix

100 g goat's cream cheese

(Contains milk or milk products (including lactose))

10 ml medium-hot mustard

(Contains mustard or mustard products)

100 g cream yogurt

(Contains milk or milk products (including lactose))

1 clove of garlic

What you should have at home

1 tablespoon of oil

salt to taste

pepper to taste

preparation


Preheat the oven to 220°C top/bottom heat (200°C fan oven).

cut vegetables


Peel the kohlrabi, quarter, and cut into 1 cm thick slices. Peel carrots, halve crosswise and quarter lengthwise into sticks. Halve or quarter the triplets depending on their size. Cut the spring onion into thin rings. peel off the garlic.

bake vegetables


Place the triplets, kohlrabi, carrots, and spring onions on a baking tray lined with baking paper, press in the garlic, and mix with half the honey, 1 tbsp [1.5 tbsp | Mix 2 tbsp] oil*, salt*, and pepper*. Leave some space for the sunflower seeds. Bake in the oven for 25-30 minutes until the potatoes are tender.

stir up the dip


In a small bowl, add the remaining honey, mustard, and 2 tbsp [3 tbsp | Mix 4 tablespoons] yogurt together to form a dip and season with salt and pepper. In a large bowl, combine the remaining yogurt with 1 tsp [1.5 tsp | 2 teaspoons] vinegar. Season to taste with salt, pepper, and sugar. Add the salad mix to the dressing in the large bowl and toss to combine.

Roast sunflower seeds


Put the sunflower seeds in heaps on the baking sheet for the last 10 minutes.

Take the tray out of the oven. Arrange the salad on plates. Press the goat's cheese into the sunflower seeds from both sides and place them on the salad mix. Arrange the vegetables next to it and enjoy the dip. Enjoy your meal!
