Hello to everyone from another Active Monday! Swimming and walking are my favorites lately. We are taking a long walk with my daughter in the morning or evenings and going swimming a few times a week.
Today I choose a summer flair workout for you. A beach workout! This will take you to the beach even if you are in your living room at home. And as a healthy recipe, I have a watermelon feta salad. I eat a salad every day now in summertime.
Enjoy them and have a sunny week!
Watermelon Feta Salad
ingredients
approx. 1 kg watermelon, seedless
2 organic limes
80 g walnut kernels
1/2 bunch mint
350g feta cheese
freshly ground pepper
2 tbsp olive oil
preparation steps
1. Cut melon into wedges, and remove the peel. Cut the flesh into large cubes. Wash the limes, rub dry, cut in half and squeeze out the juice. Drizzle the melon with lime juice. Lightly toast the walnuts in a pan without fat. Remove from the pan, let cool, and roughly chop.
2. Wash the mint, shake dry and pluck the leaves from the stems. Arrange the watermelon in bowls. Coarsely crumble the cheese over it. Scatter over the nuts, mint, and a little pepper, drizzle with oil. Garnish with squeezed lime halves if desired.
