Active Monday-1300 Steps Workout & Sweet Potatoes-Pistachios Recipe




Hello everyone. I hope everything is fine. There is almost the summer holidays but we have still over one month of school and I have to work a lot. But of course, I don't miss healthy lifestyle Active Monday with you. Today I have an indoor walking workout for you. But of course, you can make it in your garden or balcony. And very tasty and healthy sweet potatoes with pistachios recipe. Enjoy them and have a happy and healthy week.  

Sweet potatoes with pistachios

ingredients


1000g

Sweet potatoes (4 sweet potatoes)

Salt

10g parsley (0.5 bunch)

1 spring onion

60g pistachio nuts

1 lime (juice)

10g hot mustard (1 tbsp)

2 tbsp maple syrup

2 tbsp olive oil

pepper

1 teaspoon rapeseed oil

preparation steps


Wash the sweet potatoes thoroughly and cook them in boiling salted water for about 20 minutes over a low heat. Then remove, drain and let cool.


Meanwhile, wash the parsley, shake dry, pluck off the leaves and chop. Clean and wash the spring onions and cut into fine rings. Roughly chop the pistachios and mix with the parsley and spring onion.


For the dressing, mix the lime juice with the mustard, maple syrup and olive oil and season with salt and pepper.


Lightly grease the grill grate with 1/2 tsp rapeseed oil. Halve the sweet potatoes lengthways and brush the cut surfaces thinly with the remaining rapeseed oil. Place sweet potatoes cut-side down on preheated grill and grill for 7-10 minutes until cooked through and showing a nice grill pattern.


Arrange the sweet potatoes on plates, season with salt, drizzle with dressing and sprinkle with pistachio mixture.
