Today in Active Monday, I have a 30 minuter calorie killer HIIT workout suggestion for you and an avocado soup recipe. Don't forget that you have to eat this soup cold.
Avocado soup
Ingredients for 2 servings
1 pc avocado
200 g cucumber
1 tbsp lemon (juice)
1 pinch of salt
1 pinch ground pepper
1 cup of yogurt
Ingredients for garnish
3 bl rocket (fresh)
1 tbsp pine nuts
1 pinch of pepper
2 pieces of cucumber
preparation
For the avocado soup, first, remove the flesh from the avocado and drizzle with lemon juice in a bowl. Peel and small dice the cucumber.
Puree both with the yogurt using a hand blender. Season with salt and pepper.
Serve the cold soup in bowls. Garnish with pine nuts, rocket, pepper, and cucumber slice.
