Hello to everyone! It's an Active Monday day again. I hope everyone is healthy and fit and ready for a new week. As my healthy lifestyle post, I have a 15-minute winter workout to make at home and a very healthy and tasty beetroot soup. Enjoy them:)
Beetroot soup
ingredients
1 onion
1 clove of garlic
1 piece (approx. 1.5 cm) of fresh ginger
150 g floury potatoes
500 g vacuum-packed beetroot
2 tbsp olive oil
Salt, pepper, sugar
2 teaspoons vegetable stock (instant)
4 teaspoons of Greek cream yogurt
1 teaspoon horseradish
Topping as you like (e.g. cress, beetroot sprouts, pistachios)
150 ml whipped cream
preparation
Peel onion and chop finely. Peel and finely chop the garlic and ginger. Peel and wash the potatoes, pat dry and chop them into small cubes. Drain the beetroot and chop it roughly (caution, color the beetroot! Wear disposable gloves if necessary).
Heat the oil in a large saucepan. Sauté the onion, garlic, and ginger for 1–2 minutes. Sprinkle with 1 teaspoon of sugar and caramelize lightly. Add the potatoes and beetroot, fry briefly. Deglaze with 1 liter of water. Stir in the broth. Season well with salt and pepper. Bring everything to a boil and simmer over low heat for about 20 minutes.
In the meantime, stir together the cream yogurt and table horseradish for the topping. Prepare other topping ingredients if you like, for example, wash the cress and cut from the bed. Wash beetroot sprouts. Chop the pistachios.
Remove the soup from the stove and puree it finely with a hand blender. Stir the cream into the soup, heat again briefly. Season the beetroot soup with salt, pepper, and a pinch of sugar and pour into bowls. Swirl the horseradish yogurt onto the soup. Garnish with topping and serve.
