Active Monday - 15 Minutes Stretch & Radish Salad

Hey everyone! Another active monday has arrived and I've got a delicious recipe for sesame butter radishes with lemon and another video from Mady Morrison.


Radish salad with lemon and caper vinaigrette

ingredients

2 bunch of radishes
1 spring onion (s)
2 stalks of parsley, smooth
2 tbsp capers, small (glass) or small diced cucumber or small diced cucumber
2 tbsp balsamic vinegar, light or herb vinegar
¼ lemon (s), juice of it, approx.
salt and pepper
possibly sugar
6 tbsp oil (e.g. olive oil)

Clean, wash and thinly slice or slice the radishes. Clean the spring onions, rinse and cut into thin rings. Rinse the parsley, shake dry and finely chop the leaves. Drain the capers and mash them lightly with a fork if necessary.

For the vinaigrette, mix the vinegar with lemon juice, salt, pepper and possibly a pinch of sugar, then beat in the oil in a thin stream and stir in the capers or the cucumber cubes and the chopped parsley.

Mix the radishes with the spring onions and the vinaigrette in a salad bowl.
