Active Monday-10 Minute Good Morning Workout & Lemon Chicken

 

Hello everyone! Another week, another Active Monday! I am really enjoying my summer holidays, but are you too? Anyway, here's another easy and healthy recipe for lemon chicken and also a 10 Minute Good Morning Workout from Pamela Reif.

Lemon chicken

Ingredients:

  • 1 tsp cornflour
  • 1 tsp  soy sauce
  • Finely grated zest & juice 1/2 small lemon
  • 2 tsp coconut or canola oil
  • 1 skinless chicken breast fillet (around 150g), cut into 1.5cm slices
  • 1 capsicum, deseeded and sliced
  • 1 medium carrot, trimmed and thinly sliced
  • 100g broccoli, cut into small florets
  • 150ml chicken stock (made with 1/2 Massel Plant Based Chicken Stock cube)
  • 4 spring onions, trimmed and thickly sliced

Preparation Steps:

Take a small bowl, mix soy sauce, cornflour and lemon juice.

Heat the oil in a pan and then add the chicken, capsimum, sarrot and broccoli. Stir-fry for 2-3 minutes til the chicken is light brown and the vegetables soft.

Put the lemon and soy mixture into a pan, add spring onions, chicken stock and bring them to a simmer. Cook all for 2 minutes with law heat.  

Sprinkle with grated lemon zest. You can serve this meal with rice.
