Active Monday 46 - Monster Monday HIIT Workout & Zoodles

Hello everyone from the 46th week of Active Monday. Although our isolation continues due to covid 19, I try to exercise regularly with my daughter every day. Staying active is good for both of us. Today I want to add a HIIT workout for athletes who want to push their limits. As the healthy recipe of the week, I have zoodles or zucchini noodles. Have an active week!

Zucchini noodles with avocado cream and roasted pine nuts

Try this exciting alternative to pasta and easily make your noodles out of zucchini! The zucchini noodles with avocado cream and pine nuts are particularly delicious!


2 zucchini

6 tbsp pine nuts

1 avocado

2 extra virgin olive oil

1 tbsp lemon juice

20 basil leaf

100 g cherry tomato

a bit of salt

some pepper


Briefly toast the pine nuts in a pan without oil. Put the avocado, half of the pine nuts, olive oil, lemon juice, and basil in a blender and puree with a hand blender. Season to taste with salt and pepper.

Wash and slice the cherry tomatoes. Lightly salt the slices.

Use the spiral cutter to twist the zucchini into zucchini spaghetti. Cook in a saucepan with boiling salted water for a maximum of 2 minutes until al dente. Drain and drain on kitchen paper. Place on preheated plates.

Serve the zucchini spaghetti with the cherry tomatoes, the remaining pine nuts, and the avocado cream.
