Hello my dears. I hope you are healthy this week too. I would love to share with you today at 17th Active Monday week a full body workout and a very healthy and tasty vegetable schnitzel rezept. Enjoy it :)

VEGETABLE SCHNITZEL

Ingredients for 4 servings

2 eggs
160 g carrots
600 g potatoes
1 pinch of salt
8 tbsp sunflower seeds
4 tablespoons sunflower oil for the pan
160 g zucchini
1 pinch of pepper
2 tbsp sour cream
Ingredients for the decoration
2 carrots (thin strips)
0.5 bunch chives (fresh)

Preparation

Grate the potatoes, carrots and zucchini finely with a grater, add the sunflower seeds and eggs, mix well seasoned with salt and pepper. So that the vegetables stick together better, add the sour cream. Mix well again.
Heat a pan, form round thalers from the vegetable mass, fry them out on both sides with the sunflower oil.
Arrange the fried vegetable cutlets on plates. If desired, tie some raw carrot strips together with the chives to form a packet and add them.
