Fish curry
Ingredients for 2 portions:
100 g jasmine rice
2 pieces spring onion
160 g beans
140 grams of carrots
1 pc lemongrass
300 g fish fillet (salmon)
1 tbsp sesame oil
100 ml coconut milk
1 pinch of chili powder
2 tbsp curry powder
4 pieces of cardamom pods
1.5 tsp ginger, grated
4 tbsp lemon juice
Preparation:
For the fish curry, cook the rice according to the package directions (usually double the amount of water in the rice).
Clean the spring onions and cut them into fine rings. Cut the ends off the beans and cut in the middle. Peel the carrots, wash and cut them into bite-sized pieces. Finely chop lemongrass.
Rinse the fish in cold water, dry and cut it into bite-sized pieces.
Heat the wok (or large pan), pour in the oil, and add the vegetables. Cook until al dente while stirring constantly. Mix coconut milk, curry, chili, cardamom, ginger, and lemon juice. Place the fish pieces on top, put the lid on and leave to stand for 8 minutes.
Stir gently and serve with the rice.
