Active Monday - 48 & Vegan Carrot Cake

Hi, my dear friends. It' s 48. Active Monday week. I have a HIIT cardio for you but don' t worry to be tired. After this full energy workout, you can eat a tasty piece of vegan carrot cake that you can cook with my recipe. 

Vegan Carrot Cake


200 g flour
150 g sugar
2 Pk vanilla sugar
1 teaspoon Baking powder
1 teaspoon cinnamon
1 pinch of salt
100 g carrots
200 g soy yoghurt
100 ml of oil
1 MSP soda
1 tbsp. Oil for the mould

For the vegan carrot cake, first, clean the carrots, wash well and finely grate. Preheat the oven to 180 degrees and spread a cake tin with a little oil.
Mix flour, sugar, vanilla sugar, baking soda, baking powder, cinnamon and salt well in a bowl. In a second bowl, mix the carrots, the soy yoghurt and the oil well together.
Now empty the contents of both bowls together and mix very carefully. Pour the dough into the cake pan, smooth with a spatula and bake in the oven for 30 minutes.
After cooling, sprinkle the cake with icing sugar and enjoy.
