Active Monday -44 - Halloween workout and snacks

Hex hex to all of you :) I know Halloween is over for this year, but I am still celebrating. For 44th Active Monday week, I would like to give you a Halloween snack recipe and a Halloween workout. Maybe you can use it for next year. 

Halloween carrot fingers with guacamole

For the guacamole

1 small green chilli pepper

½ bunch

coriander

2 avocados

1 Lime (juice)

4 tbsp Creme fraiche Cheese

salt

pepper from the grinder

For the canapes

2 tbsp cream cheese

2 tbsp Creme fraiche Cheese

salt

White pepper

1 tbsp lemon juice

2 carrots

4 blue grapes

4 green olives stuffed with paprika

5 Organic carrots

5 peeled almonds (halved)

Preparation steps

1- For the guacamole, wash the chilli, halve lengthwise, core and finely chop the flesh. Rinse the coriander leaves, shake dry and finely chop. Halve the avocados, peel, remove the kernel and remove the pulp from the shell. Puree with the lime juice and the crème fraîche. Add the chilli and the chopped coriander leaves and season the guacamole with salt, pepper and cayenne pepper. Transfer to a bowl and cover covered.

2- For the canapes, mix the cream cheese with the crème fraîche and season with salt, pepper and lemon juice. Fill the mass into a piping bag with a perforated grommet and refrigerate.

3- Peel the carrots, cut into 1-2 cm thick slices and blanch in boiling salted water for about 3 minutes. Drain into a sieve, quench and drain very well. Wash the grapes, drain and halve. Drain the olives and halve as well. Place the carrot slices on a plate, dab the surface dry with paper towels and spray a small amount of cream cheese cream on top. Garnish with the grapes and olives.

4- Thoroughly wash the remaining carrots and cut off the thick ends and root tips. Straighten a nail-sized surface towards the tip, slightly carve the carrot and insert half an almond each as a fingernail (if necessary stick with rest of the cream cheese cream). Put the carrot fingers in the guacamole and serve.
