Active Monday 33-Body Barre Workout & Vegetable Noodles With Peanut Sauce

Hello everyone from the 33rd  Active Monday week. We are experiencing a hot , but rainy summer this year. How is summer in your country of residence? Hope it is better than ours.
Today I want to add exercises from Barre workout, which I love very much and I have received also the trainer certificate. There is also pasta with vegetables as the healthy recipe of the week. There are pasta sauce and peanuts in the recipe, be careful if you are allergic to these foods.

Vegetable noodles with peanut sauce

ingredients

For 2 servings
5 g ginger, fresh
1 shallot
2 tablespoons oil
200 ml coconut milk
1 tbsp peanut butter
3 teaspoons of soy sauce
Chilli flakes
2.5 tbsp lime juice
300 g carrots, thick
2 zucchini
1 bunch of coriander greens, alternatively flat leaf parsley
2 tbsp peanuts, roasted and salted

preparation

Ginger peel and finely chop. Dice shallot. Steam both in a saucepan with 1 tablespoon of oil until translucent. Add coconut milk and heat. Stir in the peanut cream. Season with soy sauce, chilli flakes and lime juice. Remove from heat and puree finely with the cutting stick. Keep warm on a mild heat.

Clean and peel the carrots. Clean the zucchini. Cut both into spirals with a spiral cutter. Chop the coriander greens including the stalks. Chop the peanut kernels.

Heat 1 tablespoon of oil in a coated pan. Add carrot spirals and cook covered for 2 minutes over medium heat. Add the zucchini spirals, salt everything and continue to cook covered for 1 min. Serve with the peanut sauce, coriander and peanuts.
